Japanese: Maguro Zuke Don (Raw Tuna Bowl)

(serves 6-8)
Ingredients:
- 1 lb cryo-frozen tuna, defrosted and cubed
- ½ cup garlic ginger sauce
- 2 teaspoons lemon juice
- 1 tablespoon chili garlic sauce or Sriracha (approx)
- ½ cup red onion, thinly sliced
- Avocado slices (for garnish)
- ¼ cup green onions, finely diced (for garnish)
- Toasted sesame seeds (optional garnish)
- Fresh sprouts (optional garnish)
Procedure:
- Defrost tuna overnight in refrigerator, slice into bite-sized cubes
- Combine all ingredients in a bowl (except garnish)
- Mix well, cover and let rest in refrigerator for at least one hour
- To serve: add sushi rice to serving bowl, drizzle some marinade on top of rice, top seasoned rice with marinated tuna
- Garnish with sesame seeds, avocado slices, green onions, sprouts (if desired)
